Pili

As I previously mentioned, the Bicolano palate is pretty simple. Viand and vegetables and they are good to go.

PILI
The pili nut is a fruit that I have only seen grow in the Bicol Region. It is a dish that is enjoyed by the elders, and unless you have been indoctrinated into how to cook it, it's really difficult.

To cook. In a pan, heat enough water to cover the pili you want to cook. Do not let it boil. Remove from fire just before it boils and put in a separate bowl. Add in the pili and let stand for about five minutes. When the pili has softened, remove from the water.

To eat, peel off the black skin. You should see a yellow reddish flesh. Dip in sugar or soy sauce with chili. It is a taste that takes getting used to but it is delicious.
