Ginulay na Kurakding


Living in the city, it is very rare that we find "kurakding" a wood mushroom that you find in marshes. I only see them whenever we go home to the province.
So when serendipity offers you a chance to eat them, you grab it and buy whatever you can. This is a family favorite and is often asked for by friends whenever they come home.
To cook:
In a large pan, put in crushed garlic, bagoong, sliced pork and chili (optional).
Add coconut milk and cook over medium heat. Keep stirring until it boils and the coconut milk is cooked.
Add the mushrooms and stir occasionally until the mushroom is cooked.
