Ginisang Mariguso

Mariguso. better known as Bittergourd, is a fruit. But it's so bitter that nobody would even consider it for dessert. And, since it's green, it's better known as a vegetable. The less grooves/curves the fruit has, the less bitter it is. But choosing them is not an exact science, it's more a game of chance.

To eliminate the bitter taste before cooking, immerse the sliced bittergourd in a salted water bath for at least an hour. Remove from water and wring out excess water.


To cook, saute garlic, onion and tomato in a bit of oil. Once tomato has wilted, add in the sliced bittergourd.
Saute for a minute until the vegetable has softened, salt and pepper to taste. Add in the beaten eggs, and cook for a minute while stirring.
