Pecadillong Sira with Kangkong

For variety when preparing fish for dinner, you can cook it with a bit of coconut milk and kangkong. If you are not able to get hold of kangkong, spinach is a good substitute. 

To cook:
Prepare fish, Wash thoroughly and season with salt.
In a pan, put in crushed garlic, sliced small onion, and tomatoes.
Add a small amount (about half cup) of coconut milk.
Let boil.
Add the fish and simmer until cooked.
Season with vinegar, cracked pepper and salt.
Add kangkong and simmer until cooked.
