Pancit Bihon

Noodles is a staple in the Filipino table. It can be served as merienda or main course. It is always a part of a birthday celebration, because as they say, noodles are for long life.

To Prepare:

Precook the pork, by boiling it with a bit of salt. Once cooked, let cool. Julienne. Set the broth aside.

Julienne the vegetables: carrots, cabbage, red/green bell pepper, onion.

Peel shrimp and slice, if desired. You can keep them whole.

Also prepare crushed garlic.

To cook:

Saute the onion and garlic in a bit of cooking oil. Remove from oil once browned. Set aside.

Add the sliced pork, add a bit more cooking oil. Brown the pork. 

Add the vegetables and add a bit of water or broth. Season with salt and pepper. 

Add shrimp. Once cooked, remove the mixture and set aside.

Put in the broth and season with patis and a bit of soy sauce for color. Add broth cube.

Once boiling, add in the noodles. 

Let simmer for about five minutes. Check noodles for doneness.

Once cooked, add in the garlic and onion and the vegetable mixture. Mix and turn off fire. Serve
