On mama's birthday, we try to celebrate it, even with a simple gathering. Of course, what is a gathering without food?
On this particular day, we had the usual noodle dishes (for long life) and chicken. But what I liked most was the escabeche, which basically means Fish in tomato and vinegar based sauce.
This is a good recipe to use with left over fish i.e, repurposing day old fried fish. But I prefer to have this than just eating plain fried fish.
To cook:
Fry the fish separately and set aside.
Saute garlic, onion and tomatoes.
When tomatoes are cooked, add julienned long pepper.
Season with vinegar and a bit of sugar.
Add Salt and pepper.
Serve on top of the fried fish.
